Regular sausage can hide all the fat and calories. But, you can use Turkey Sausage in any sausage recipe and you won’t miss out on anything. This is my Skinless Turkey Sausage recipe in a tomato sauce with pan seared veggies. I’m drooling just thinking about it. As an extra bonus, it’s easy to make and not a lot of clean up because you only use ONE POT for the whole meal. This dish is savory and luscious, and even easy on the wallet. It’s a winner winner turkey sausage dinner.
- Package of skinless turkey sausage (you can use skin on or chicken)
- 1 green pepper
- 1 onion
- 1 small can stewed tomatoes (no salt added)
- 1 large can crushed tomatoes (no salt added)
- 1 can peas (no salt added)
- 3 cloves minced garlic
- 1/2 cup red wine
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chiffonade fresh basil
- Chopped fresh parsley for garnish
- 1 large pot with a lid
- 1 flat spoon
- 1 large regular spoon
- Cut the onion and pepper into slices and set aside
- Mince the garlic and set aside
- chiffonade the fresh herbs and set aside (hint: stack all the basil leaves onto each other into one stack, roll them into one roll, then cut them )
- Cut the turkey sausage into bit size slices (hint: if the sausage is too soft to cut easy, put it in the freezer for 10 minutes and it will then be easier to cut)
- Heat a large pot and add the oil
- Add the peppers and onions and sauté until soft and a bit charred (not burnt) (about 5 minutes)
- Add the garlic and pan sear for 30 seconds only
- Remove the peppers, onions and garic and set aside
- Add the turkey sausage pieces and pan sear until a bit charred on each side (2-3 minutes per side)
- Remove the turkey sausage and set aside
- Put the pot back on the stove and deglaze the pan with the wine (that’s where the goodies are) and scrape up the bottom of the pan with a flat spoon
- Add the stewed tomatoes to the pan and with the flat spoon break them up a bit
- Add the tomato sauce
- Add back the peppers, onions, garlic, and turkey sausage
- Drain the can of peas and add them to the pot
- Add the fresh herbs
- Bring it to a simmer and simmer for 10 minutes
- Plate the meal in a bowl and garnish it with parsley
