Individual 4-inch Angel Food Bundt Cake

You CAN have dessert if you are watching your weight. It’s all about the ingredients and portions. Tonight I made individual 4-inch Angel Food Bundt Cake for me and my hubby. Angel food cake mix is fat free, but you can add a LOT of fat and calories without realizing it. So choose your toppings carefully.

2 servings:

  • Two 4-inch bundt cake pans (or Angel Food Pans)
  • 1/3 of a box of angel food cake mix
  • 1/3 cup of water and 1 tablespoon
  • 2 tablespoons sugar free strawberry jam or jelly (use any sugar free jam you like to compliment the fresh fruit)
  • 3-5 strawberries (or any fresh fruit)
  • Large mixing bowl
  • Small mixing bowl
  • 2 Whisks (or 1 whisk and 1 fork)
  • 1 spoon

  1. Preheat oven to 350
  2. Add 1/3 of a box of angel food cake mix to a large mixing bowl
  3. Add the water and whisk until mixed
  4. Pour the batter into each bundt pan (about 1/3 way up)
  5. Bake for 25 minutes
  6. While the cakes are baking, slice up the strawberries and set aside
  7. Add the jam (or jelly) to a bowl and whisk (or use a fork) until it loosens up
  8. When the cakes are done, take them out of the oven and let cool
  9. When cook, take them out of the pan, turn them upside down and place on a small plate
  10. When ready to serve, spoon the jam/jelly over the top of the cakes and top them with the strawberries
